New Salad Concept Coming to Raleigh

Just Salad, a New York-based fast casual restaurant that caters to a healthier lifestyle, will open its first North Carolina location on Lake Boone Trail in Raleigh in July.

Known for its reusable bowls, affordable prices and health-conscious meals, Just Salad has partnered with Raleigh’s Cattell Street Brands to be its first domestic franchisee.

Led by the former president of BLD Brands, Peter Kim’s Cattell Street Brands plans to open four more Just Salad locations in North Carolina by the end of next year.

“We've got this site (Lake Boone) under construction right now. We have two other sites under lease in Charlotte. We’re looking at other locations, but really based around Raleigh, Chapel Hill, Durham and Morrisville,” said Kim, CEO of Cattell Street Brands. He added that after the initial five locations are up and running, Cattell Street Brands plans to open three to four additional stores each year.

“We’re going to bring the best of both worlds,” he said. “We’ll have a capacity so you can sit down and have a really great meal within a nice environment, as well as a great opportunity to grab and go as well.”

Just Salad's re-useable bowl concept saves a total of 75,000 pounds of plastic each year. “This year the company wants to expand this plan even further and try to save over 100,000 pounds of plastic used,” says Kim.

Bowls at Just Salad will cost customers $1, and every time they bring their bowl back, they’ll get a couple of free toppings for their salad.

Just Salad currently has 38 locations worldwide, including restaurants in New York, Chicago, Philadelphia, Florida and Dubai. The company started in New York in 2006 when founder Nick Kenner, who worked in finance, wanted healthier options across Manhattan.
