You Can Drink Your Avocado at Just Salad, Opening its first NC Location in Raleigh

RALEIGH, N.C. — Just Salad will open its first North Carolina location on Friday, and avocado toast is on the menu.


Just Salad is also known for its salads, smoothies, soups, wraps and bowls. The Lake Boone Trail location is the first of five restaurants planned for North Carolina by 2020. The New York City-based chain will open inside Marketplace at Lake Boone, which is located near the Blue Ridge Road intersection.


"We are excited to bring New York's favorite healthy fast casual destination while building partnerships with local farms and small businesses that are aligned with our mission to make healthy happen for everyone," said Jane Kim, Cattell Street Brand's Chief Marketing Officer and Co-Founder.


The new location will work with Raleigh Night Kitchen and Morning Dew Farm in Taylorsville to source local ingredients. Just Salad, which has over 35 locations, saves over 75,000 pounds of plastic each year through its reusable bowl program.


Some of the most popular menu items include the Barbacoa Market Bowl, which features chicken, brown rice, kale and broccoli parmesan slaw and spicy avocado mash, and the avocado toast boxes, which include two pieces of bread topped with avocado and either roasted pumpkin seeds, feta and crispy onions or charred corn, pickled red onions and smoky ranch.


The bowls start at 400 calories, and many salads clock in at under 200 or 300 calories.


The Raleigh location will open at 11 a.m. on Friday with a ribbon cutting scheduled for 10:30. $2 salads will be offered on opening day.
